Well you always have the Expert at the Card Table?
In addition to this you have almost any book by Darwin Ortiz. Jason Ladanye’s books are also great and gambling themed. Steve fortes books on gambling protection ‘Casino Game Protection’ and ‘Poker Protection’ both of which are fantastic books but are not designed to teach the techniques but inform you of them. Steve Forte has a new book coming out that will teach many of his own techniques best suited to magic and we should see that at some point this year.
Otherwise, plenty of books look into gambling work. I’ve only mentioned a few above.

Scarne On Card Tricks (There’s not much sleight of hand here, but some of the effects mentioned are pretty nice)
