I've considered holding off and waiting for the Copper Rarebit deck to come back but I have so many cards...and no pins...the choice seems obvious at this point

Same for me. Theory11 support said that they're still working on these emails and we will get a prize claim email sometime this week.

Our prize claim emails have been giving us trouble, but we are working on them now. You all should see emails later this week. Once we can fix them, you will get your prize claim emails within 48 hours of winning a physical prize.
