The first watch trick is known as "PK time". Banachek has a book called Psychokinetic Time which covers similar effects.
However, I think the specific effect used in the video is a $300 effect released by Nobody Knows. I personally wouldn't perform it this way though as I feel like it makes the method fairly obvious.
I'm not quire sure how he divined the name of the friend. I suspect there may have been some pre-show work involved.
The last effect with the phone is a Patrick Kun trick called Timeline.

Alright, thank you. I'll try looking into more of Banachek's work and see what works for me. I've heard of Timleline before but only it affecting the shown time on your own phone. Is there a method that makes it possible to change time for others around you, or where could I learn that?
Yup. If you get creative with Timeline you can accomplish the exact same effect seen in the video.
Right, I was being silly by ignoring the obvious and trying to think about it too much. Now that I've given it some thought, it makes sense how it was done
