This totally depends on the room. I have a set that gets a lot of applause, so I usually do a table on one side of the room, then the other. Then I move back to the first side and start working through the tables. After hearing the applause, people want me to be at their table and are anticipating my arrival. Then I progress using two or three different sets.
Last weekend I did a gig that was four hours of strolling magic for 55 people. Used so much of my material! I made 6 sets, and passed the room using the first three (which each had similar elements) and then passed through the room with the second set of three routines. Then I had a list of things that I had prepared a few of and passed through the room with that material - hitting each table with a little extra effect. Worked pretty well, but I used all of my best material and they want to have me back next year! I had better get practicing some older material!
