Look up Ray Kosby. He has two DVDs that are nothing but difficult sleights.
'Raise Rise' is an insanely difficult card trick.
For coins, he has a Coin Matrix-like trick that, after watching the method, just sounds incredibly difficult. And more than likely IS difficult.

A perfect pass, a center deal, Domicio's second deal and the clip shift are all difficult. A perfect on the table riffle shuffle is tough.
I think pick pocket magic can be very difficult, watch steals, belt steals, tie steals and so on.
Jazz magic is really tough. Magic with 35 outs and you have to keep on your feet just to see where the audience takes you. Tricks that require estimation, there are various versions of the trick that cannot be explained that are very difficult.
