Good luck finding Steamboats. His recommendation is valid though. I worship that deck. I find the casino grade Bee stock a bit thick for my tastes with gambling moves(Just my opinion.) For me, soft, flexible, and thin is where it is at. Thus anything on Bee Aristocrat stock is great. Also, the v.4s and v.5s, on what is basically a recycled stock version of the Aristocrat, is pretty nice. Waddington No.1 in poker size and Texan Palmettos are some other good choices. You might also try out any of Richard Turner's Gold Seal decks. I have yet to try these(on order as we speak) but they are made to the specifications of a guy who is a living legend among not only gambling demonstrators, but card magic in general.
Overall my current favorite for gambling demonstrations is the Expert At The Card Table Bees on the Aristocrat stock(almost the same card as T11's Stingers but I like the color more.) They are easy to faro in the hands or on the table. Very smooth finish leads to beautiful fans and spreads and, more importantly, a smooth push-through shuffle. Soft flexible stock leads to easy buckles for bottom techniques and easy manipulations for precise techniques such as riffle stacking.
Caveat-I don't currently have a second deal demonstration so some of my suggestions are cards with borders. If seconds are a big part of your demonstration you should probably lean more heavily towards one of the afore mentioned borderless backs. The Texans, Steamboats, or the standard club specials.
