I use a Strike double and I turn single cards over in the same way. Making a double look like a single card is very hard, making a single card look like a double is very easy.

Just give them the deck and let them shuffle it. Refusing to let them have the deck just makes it seem like your hiding something and will probably make the performance less enjoyable for your audience.
