The most entertaining one for me is FOUR, because Aaron Fisher is just so funny. Invisble Reverse gets great reactions if you present it well, as does Sloppy Shuffle. So I'd reccommend those three.

I think most people are smart enough to realise magic isn't real, so showing your consultants or whatever is no biggy. I think it adds to things. Just think, Mindfreak would be kinda boring if you didn't have Banachek and the rest talking and stuff.

If the card is on top and they ask (assuming you're doing an ACR.. it sounds like it) if it is, then play with them and say something like "Well done, you got it!" or something. Remember, it's not about you.. it's about them.
