    To do an effect like this, I'd start with Chapter 4 of Encyclopedia of Card Tricks, followed by Chapter 17 and then look at the works of Kirk Charles and/or Si Stebbins / Juan Tamariz / Simon Aronson. For the Katy Perry version, you could just use the knowledge from Encyclopedia of Card Tricks.

    Why do some spectators insist on messing with you?

    Your character and presentation should be designed to have the audience want you to succeed. It is not a challenge between the magician and the spectator. Creating a challenge can be inadvertant and result from a say-do-see presentation or a "I'm going to trick you presentation."

    Royal Road is the best place to start. To get things to flow more smoothly takes practice and rehersal. Practice is doing the sleights while rehersal is doing the sleights and saying the patter as you perform simultaniously.
